Apple Sliver Baked Oatmeal with Crumb Topping

Apple Sliver Baked Oatmeal

Makes one 9×13 pan

2.5 cups gluten free rolled oats 

2 tbsp Ground Flaxseed

2 tsp Cinnamon

1 tsp Baking Powder

1/2 cup Applesauce

1 tsp Vanilla Extract

1/4 tsp Sea Salt

1 tbsp Coconut Oil, melted

1/4 cup Maple Syrup

2 cups organic soy milk, or milk of choice

¼ cup chia seeds

4 thinly sliced apples, I use the mandolin to make extra thin 

Streusel Topping 

¾ cup of organic rolled oats

½ cup or organic oat flour

1/3 cup of room temperate coconut oil

1 teaspoon ground cinnamon

¼ cup of organic dark brown sugar or coconut sugar

Set your oven to 375 degrees and grease a 9x13 baking dish. Begin by melting your coconut oil in a small saucepan. Once it’s melted, remove from heat and set aside to cool slightly. Mix all of your ingredients in a large bowl, excluding the apples. Once the ingredients are fully incorporated, fold in the apples and pour into a greased 9x13 baking dish.

Make the topping by mixing the oats, oat flour, brown sugar and cinnmon. Used your fingers to add the coconut oil and break into smaller pieces until the topping comes together. Sprinkle over the oats and bake for 45 minutes.
