Happy Spring, Nourished Mamas! This month’s menu is a celebration of warmer weather and a new season. Bright citrus flavors, a light yet filling lunch and a diverse variety of plants and seeds are my inspiration for this menu. The breakfast yogurt parfait is full of lemony, creamy coconut yogurt, and accented with a sweet and salty granola. For lunch, the kale salad has a protein punch from white beans and a seedy sprinkle to keep you energized through those afternoons at the park. And, of course, an order of Nourish cookies. Enjoy!

Nourished Mama is a once monthly organic, plant-based meal delivery service, specifically for mothers and caregivers who are challenged to have the time to nourish themselves. The delivery includes four breakfasts, four lunches and one order of Nourish cookies, all individually packaged in compostable containers.

We deliver to the Saint Louis area. Order for yourself, a caregiver you love, or as a gift for a new mama. I hope you enjoy!

Lemon Yogurt Parfait with Macadamia Granola

For breakfast, we’re layering bright and citrusy lemon coconut yogurt with crunchy granola. Not your typical store-bought granola with tons of sugar, ours is full of oats, macadamia nuts, chia seeds, and coconut, making it the perfect balance to the creamy yogurt. This breakfast is full of fiber, antioxidants, vitamin C and probiotics (gluten-free, vegan, contains coconut and macadamia). 

Cauliflower and Kale Salad with White Beans and Seedy Sprinkle

This salad is the perfect balance of a light meal, yet full of protein and very satiating. A bed of kale is topped with roasted cauliflower, white beans, watermelon radish, and a seedy sprinkle made of flax seeds, sesame seeds, sunflower seeds and pumpkin seeds. Top it all off with a bright lemon vinaigrette for a creamy, citrusy lunch (gluten-free, vegan).

Our Nourished cookies have quickly become a customer favorite! You will receive an order of ten Nourish cookies, chewy, gluten-free, refined sugar free and vegan cookie with pumpkin seeds, raisins and Hu Chocolate chunks (gluten-free, vegan, contains almonds).
